Chicken & Gnocchi Soup

you will need:

1-2 tbsp. oil

1 large yellow onion, quartered then thinly sliced

2 large carrots, diced small 

2-3 stalks celery, diced small

1 1/2 - 2 cups shredded chicken

2-3 cloves garlic, pressed using a garlic press or very finely minced 

3 packed cups fresh Spinach

1 package potato gnocchi 

1 tsp. thyme, fresh or dried 

1 bunch fresh parsley, leaves only 

6 cups chicken stock, room temp

salt and pepper to taste

 

  1. Using a heavy bottomed pot, heat the oil over medium high flame. Once the oil comes to temp, easily moving along the bottom of the pan, add in the onions. Stir to evenly coated with oil, let cook for a few minutes before adding the carrots and celery. Lightly season with salt and pepper

  2. Add the chicken and season with thyme.

  3. Add the freshly pressed garlic and stir to combine then immediately pour in the stock, to ensure the garlic doesn't burn. Add the parsley and cook for about 20 minutes before adding in the gnocchi and spinach. cook for an additional 5-7 minutes before serving. Season with salt and pepper as needed

Serve hot, garnished with fresh thyme - Enjoy!
